Chick Corea Salad

I had this salad for lunch at Chilly Water Brewing. Normally, I don't include salads in this recipe database but this combination was amazing. It's possible I was also super hungry since all I had was cottage cheese and tuna for breakfast (don't knock it 'til you try it) and it was 3:00.
 
I'm pretty sure the red onion was pickled (or slightly pickeled) and the red pepper was roasted. I could be wrong, though. Might be worth trying both ways.
 
Update (JAN-18-2024) - I wasn't just hungry. I've made this multiple time since the nice summer day I first discovered it. Yes, I use pickled onions but I also use red onion. Really, you can expirement. It's a salad after all. But if you stick to the basic ingredients you should love it.

Ingredients

  • Spinach
  • cooked quinoa (about 2-3 cups)
  • goat cheese
  • red onion (pickled?)
  • red pepper (roasted?)
  • roasted chickpeas
  • sun dried tomato
  • balsamic dressing

Ingredients as shown on the menu: Spinach, quinoa, goat cheese, red onion, red pepper, crunchy chickpeas, sun dried tomato, tossed in balsamic dressing

Directions

  1. Cook quinoa and let cool
  2. Roast chickpeas and let cool
  3. Combine with other ingredients and toss together with balsamic dressing
