Sean Carney made this for our Comer Reunion last year (2023) and everyone loved it. Pam made it again this year and now it's making its way into the recipe annals.
Wash and trim the kale, then chop into chunks that are maybe a couple inches-ish each. Put the kale in a bowl and squeeze a bunch of lemon juice on it, then add a little olive oil and salt. Massage, massage, massage!
For the dressing, mix equal parts olive oil and balsamic, then add some maple syrup to sweeten it up. Maybe like a teaspoon of maple syrup per two tablespoons each of olive oil and balsamic.
Toss the massaged kale, plus most of the raisins and pistachios, with about half of the dressing. Then top the salad with the raisins and pistachios, some fresh lemon juice, the parmesan, and salt and pepper, if people want that. They can then add more dressing if they'd like it from the leftover reserve.
