Pizza Dough

This is an Atkins family favorite and a very simple pizza dough recipe. It's a fun meal that everyone gets to participate in, if they want. 

Servings: About 6 10" pizzas
Prep Time: 3 h 30 m
Cook Time: 10 m

Ingredients

  • 4 ½ cups high gluten flour
  • 1 tsp instant yeast
  • 1 ¾ tsp salt
  • ¼ cup olive oil
  • 1 ¾ cup water (ice cold)

Directions

  1. Combine dry ingredients in a mixing bowl.  If using an electric mixer, set on low setting.
     
  2. Combine oil and water and incorporate that with dry ingredients.
     
  3. Mix on low for 8 minutes.

    Dough ball should be slightly tacky and all flour should be kneaded into ball.  Dough ball will climb the dough hook.  If it is too wet, add small amounts of flour as is required to get that tacky yet firm effect.
     
  4. Transfer dough to a bowl twice its size and let rise in warm place for 3 hours.  Punch down every hour.  After 3hr mark, pre-heat oven to 550.
     
  5. It's now ready for portioning and rolling out.  Cut off fist size pieces and roll out on floured counter.  Place pizzas on lightly floured pizza peel or flat pan.  Slide into pre-heated (550 degree) oven and turn every so often to acquire even browning.
