Sausage & Egg Muffins

I watched a video of this recipe this morning, had all the ingredients, and it sounded good. It was quite delicious. Only thing I might change is the big sausage patty on the bottom. I'd prefer to cook sausage in a skillet and chop it into smaller pieces.

You can have fun with the recipe by adding different toppings or mixing them into the egg batter.

Ingredients

  • 12 sausage patties
  • 9 eggs
  • 1/4 cup diced roasted red peppers
  • 1/4 cup diced onions
  • 1/2 cup to 1 cup of shredded cheese
  • salt
  • pepper

Bonus:

  • siracha sauce

Directions

  1. Preheat oven to 400 degrees F
  2. spray a 12 muffin baking pan with oil, or wipe each muffin hold with butter
  3. place 1 sausage patty in each spot
  4. whisk eggs and pour evenly over each patty to just under the rim
  5.  add diced roasted red peppers and onions as appropriate
  6. season with salt and pepper
  7. cover with a small amount of shredded cheese
  8. bake for 25 minutes 
  9. let cool for 5-10 minutes
  10. add to plate and drizzle with siracha sauce, if desired
  11. Enjoy!
