This is a delicious snack when you're craving something sweet. I made it without Jessica's additions and it was much more coconutty, although still pretty dang good. The additional spices make it better.

Servings: 12 slices
Prep Time: 10 m
Cook Time: 1 h 30 m

Ingredients

  •  1 large sweet potato or 2 small/medium ones, about 450 grams (Jess used a half can of pumpkin filling)
  • 4 large eggs
  • 1/2 cup coconut flour
  • 1/2 cup coconut sugar
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt

Jessica's additions:

  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves

Directions

  1. Preheat oven to 350F.
  2. Mince 1 large sweet potato or 2 small ones in a food processor until rice consistency.
  3. Add rest of ingredients to food processor and blend until smooth.
  4. Bake in a parchment lined standard bread pan (4 1/2" by 8 1/2") for about 90 minutes until a toothpick when inserted comes out clean. (Mine only took 75 minutes so keep an eye on it)
